VINEYARD
BAIE Wines vineyard is located in the Bellarine Peninsula and is strongly influenced by the maritime cool climate. The vineyard is bound to the North directly overlooking Port Phillip Bay, and the 16-year-old vines are grown on coastal loam, with a clay loam subsoil. Our wines are made from domain grown fruit in Curlewis, Bellarine Peninsula Geelong at a Latitude – 38.163354 and Longitude 144.542334. Our philosophy of viticulture and winemaking is to best represent our geology, climate and the grape growing season of that year respectfully, consistently and honestly. All stages of fruit development, such as pruning and canopy management, are overseen by Simon and Peter to retain the integrity of the vineyard and season and nurture each wine’s personality. We work on the simple principles that wines begin in the soil. Each year we work on assessing and managing requirements of soil, vine health, rainfall and protection from sun and wind to ensure an approach to grow the best fruit possible.

WINEMAKING
The Shiraz grapes are handpicked and destemmed to small open fermenters using wild yeast for 7-10 days peaking at 28 degrees. Pressed off at dryness to new, first, second and third fill French Oak barriques (sourced from Troncais and Allier forests) and matured for 14 months and bottled in June 2017.

VINTAGE
The early harvest we experienced in 2016 combined with a drier and warmer March and April resulted in early dormancy for the vines. Above average rainfall in winter and spring set the scene for a solid vintage providing plenty of subsurface water reserves. BudBurst occurred at expected timings and a dry, warmer period finished the year. A good rain event in late January/ early February provided some much-needed water for the vines enabling veraison and strong ripening. Harvest kicked off in March and continued through until May with some large rainfall events during this time which were managed in the vineyard effectively. Overall a strong vintage, wines in oak and tank were vibrant, with good acidity and freshness.
